2.5 cm (1 inch) thick

onion

butter

cooked brown rice

dried apricots
finely chopped

freshly ground black pepper to taste
basting mixture
1 tbsp
cooking oil
4 tsp
lemon juice
2 tsp
dried or 2 tbsp chopped fresh sage

Instructions

Saute onion in heated butter in a heavy-based saucepan until translucent. Add
remaining ingredients and leave to cool.

Prepare the basting mixture by mixing all the ingredients together.

Trim off excess fat according to preference. Cut a pocket in each chop, fill
with a little stuffing and secure with a cocktail stick.

Cook chops 10 cm (4 inches) under a pre-heated grill for 5 to 7 minutes in total
(medium) or 7 to 10 minutes in total (well-done), basting frequently with
basting mixture.

Season with salt and pepper and serve.
