Prawns in Coconut Milk Curry

Prawns
shelled

Turmeric
haldi powder
3 tsp
Salt
3 1/2 floz
Creamed coconut
16 floz
Water
3 1/2 floz
Vegetable oil

Onion
large, chopped
1 tsp
Red chilli powder
1 tsp
Sugar

Green chillies
chopped

Instructions

Marinate the prawns with salt and turmeric powder. Keep aside for half an hour.

Blend together the creamed coconut and water. Keep aside.

Heat the oil in a wok (kadhai); fry the prawns on high heat until golden brown.
Remove with a slotted spoon and keep aside.

To the same oil, add onion and fry till golden brown. Add red chilli powder and
cook for 2 - 3 minutes.

Add the coconut-milk mixture and bring to the boil .

Add the prawns and green chillies. Cover and cook on low heat for 20 minutes or
until the gravy thickens. Serve hot.
