🧂 Ingredients
1.5 lbs
mixed variety potatoes
2+1/2 cups
chopped mixed variety radishes
1 cup
thinly sliced golden beets
1/3 cup
fresh basil leaves.
1/4 cup
extra virgin olive oil
2 tablespoons
red wine vinegar
1
garlic clove
1 teaspoon
honey
Kosher salt and Freshly ground pepper

Instructions

Cut the potatoes into pieces and boil in salted water until tender.

Chop radishes.

Roughly chop the basil

Drain potatoes, and rinse with cold water.

Combine the potatoes, radishes, and beets in a bowl.

Toss with the chopped basil.

Whisk the oil, vinegar, garlic, and honey together.

Season with Kosher salt and Freshly ground pepper.

Toss the salad with the dressing.

Season with additional Kosher salt and Freshly ground pepper to taste.

Serve.
