Instructions

Place the peas into boiling salted water, with a bundle of mint stalks; bring
back to the boil and cook steadily for 4 minutes.

Pass through a sieve or machine to make a puree. Add 2 oz butter, seasoning, mix
together over heat and serve dome-shape in a vegetable dish, decorated with a
scroll effect.
