Peach & Lime Mojito

1 kg
fresh peaches
(or your favourite stone fruit)

zested & juiced
1 cup
caster sugar
½ cup
water
ice cubes
4-5 tbsp
mint leaves

soda water

white rum, gin or vodka

Remove stone from peaches and roughly chop. Add to a large pot along with zest
and juice of limes, caster sugar and water. Place pot on a medium heat, bring to
a simmer then allow to reduce into a pulp for 10-15 minutes (depending on the
softness of your fruit). Use a potato masher to break peaches up while cooking.

Once sugar has dissolved and peaches have softened, remove from heat and allow
to cool for at least 10 minutes. Place half the mixture into a heat-safe food
processor or blender and blend until smooth. Repeat with remaining half.

Allow pulp to come to room temperature before serving or placing into the fridge
to cool.

To serve, place 3 tablespoons of peach pulp into each glass with 30ml of liquor
(if using), stir, then fill with ice cubes. Place a slice of lime and some mint
into each glass and top up glass with soda water. Alternatively place 2 cups of
syrup with all 'to serve' ingredients into a carafe for easy sharing!
