Instructions

1 Pre-heat oven to 375°
2 In a small bowl combine flour, baking powder, xanthan gum and salt. Set aside.
3 In a medium bowl beat butter, aquafaba, sugar, brown sugar, vanilla and almond
extracts together until creamy. Gradually add in flour mixture until fully
combined.
4 Drain maraschino cherries and pat dry with a paper towel. De-stem and chop
maraschino cherries into quarters.
5 Stir in chocolate chunks and cherries until evenly distributed throughout
batter.
6 Line baking tray with parchment paper. Roll cookies into 1-2 inch balls and bake
for 12 minutes or until golden brown.
7 Let cookies cool for 15 minutes and enjoy!
