Daring Lemon & Herb vegan chicken

vegan plain Greek yogurt

1 tbsp
lemon juice
1 tbsp
garlic powder
1 tsp
salt
1/4 tsp
pepper
4 tbsp
dill
1/4 cup
olive oil
1
cucumber
sliced
1 pint
cherry tomatoes
or sliced tomatoes of your choice
1 tbsp
lemon juice
1/4 cup
olive oil
1 tbsp
red wine vinegar
1
garlic clove
minced
1 tsp
oregano
vegan feta cheese for topping,

Instructions

Cook the vegan chicken according to package

Prepare the cucumber salad by combining all ingredients into a mixing bowl and
toss to combine.

Make the tzatziki by whisking all the tzatziki ingredients together until creamy

To serve, place the vegan chicken, cucumber salad, tzatziki, over greens, or
brown rice in a bowl. Top with feta cheese and extra dill (optional)
