Instructions

1 In a 3-quart saucepan, cook the ground beef over medium-high heat until browned.
Drain and set aside.
2 In the same saucepan, melt 1 tablespoon of butter over medium heat. Add the
onion, carrots, celery, basil, and parsley. Sauté until the vegetables are
tender, about 10 minutes. Add the minced garlic and cook for another minute
until fragrant.
3 Pour in the chicken broth, then add the potatoes and the cooked beef. Bring the
mixture to a boil, then reduce the heat, cover, and simmer for 10-12 minutes
until the potatoes are tender.
4 In a small skillet, melt the remaining butter. Stir in the flour and cook for
3-5 minutes until bubbly. Add this mixture to the soup and bring it to a boil.
Cook and stir for 2 minutes until thickened.
5 Lower the heat and add the cubed cheese, milk, salt, and pepper. Stir until the
cheese is completely melted. Remove from heat and blend in the sour cream.
