Instructions

1 Preheat the oven to 325°F.
2 Spray the cake pans with cooking spray and place a circular piece of parchment
paper on the bottom of each pan. You can get parchment circles by tracing the
bottoms of the pan onto a large piece of parchment paper, then cutting the
circles out.
3 Weigh out all of the ingredients into small bowls.
4 Combine the sugar, oil, eggs, vanilla, and vinegar in the mixing bowl and mix on
low-medium speed until fully combined.
5 In a separate bowl, combine the flour, baking soda, and salt, then sift into
another bowl or onto a piece of parchment paper, through a mesh strainer.
6 Alternate adding the dry ingredients and the milk into the mixing bowl, starting
with the dry ingredients. Do not add milk until the flour is fully mixed into
the wet ingredients - this prevents lumps. After each milk addition, scrape down
the bowl.
7 Divide the batter equally between the pans and bake for 40-50 minutes, until a
knife is inserted and comes out clean or with only a few crumbs.
8 Cool the cakes in the pans on a wire rack until the pans are only warm to the
touch. Once cooled, flip the pans over and carefully lift the pans off of the
cakes. Remove the parchment circle and wrap the cakes in plastic wrap. Store in
the fridge or freezer, depending on when you are using them.
