Instructions

1 In a large skillet, over medium-hight heat, melt the butter.
2 Then add the chopped bacon and cook until it's a bit browned.
3 Once bacon is cooked, remove excess fat, add the jalapeños, corn, and most of
the chopped scallions. (The rest will be used for serving). Give the mixture a
good stir.
4 Add salt, pepper, and cook for another couple of minutes.
5 Place mayo in a small cup and add condensed milk. Stir well. Add it to the corn
mixture, stir well and cook for a couple of minutes.
6 Add mozzarella cheese. Stir in well.
7 Transfer your corn mixture to a small cast iron skillet and broil on low for
about two minutes, making sure not to burn the surface.
8 Once done, remove from the oven and top with the remaining chopped scallions.
9 Serve with tortilla chips or some crusty bread and enjoy!
