1 cup all natural creamy peanut butter
¾ cup coconut sugar
1 large egg
½ cup dark chocolate chips

1 First, preheat the oven to 350°F (175°C) and line a baking sheet with parchment
paper.
2 Mix the cookie dough: In a medium bowl, combine the peanut butter, coconut
sugar, and egg. Stir until smooth and fully combined.
3 Shape the cookies: Scoop out about 1 tablespoon of dough and roll it into a
ball. Place the balls onto the prepared baking sheet, about 2 inches apart.
Flatten each ball slightly with a fork, making a criss-cross pattern.
