Instructions

1 Dice cod and reserve.
2 Juice limes.
3 Marinate cod in lime juice for 20 minutes.
4 Mix olive oil with garlic, shallots, fennel, tomato, cilantro, mango and Fresno
chili.
5 Season with salt and pepper to taste.
6 Add cod with lime juice to the mixture. Stir to combine.
7 Plate in martini glass or stem glass or bowl.
8 Garnish with micro greens.
9 Serve with fresh tortilla chips or crostini.
