Easy Zucchini Salad

Can you eat zucchini raw in a salad? Yes you can! After breast cancer, my
doctors put me on a plant based diet. Here is an easy zucchini salad recipe that
our family loves.

🧂 Ingredients

1 large zucchini
1 cup Cherry Tomatoes
4 TBSP Feta
1/4 cup Sliced Almonds
1 & 1/2 TBSP Olive Oil
1 TBSP Lemon Juice
Salt and Pepper to taste

Instructions

1 Mix the olive oil, lemon juice, salt & pepper together and set aside.
2 Cut the ends off the zucchini, and peel the outer skin off.
3 Use the peeler to continue making thin slices with the zucchini until the whole
thing is peeled.
4 Chop the tomatoes in 1/2.
5 Place the zucchini and tomatoes in a bowl.
6 Add feta, sliced almonds, and the olive oil mixture.
7 Toss the salad.
