Instructions

1 1. In a bowl, mix peanut butter and rice malt syrup until well combined
2 2. Divide the peanut butter mixture between 10 mini ice cube trays and freeze
until form

(around 3-4hrs)
3 3. Preheat oven to 180C
4 4. Make cookie dough by mixing all cookie ingredient (except white chocolate
chunks) until a dough forms
5 5. Fold in chocolate chunks until evenly distributed
6 6. Divide the cookie dough into 10 balls and form a hole in each ball
7 7. Place an peanut butter filling Ice cube in each hole and gently mould the
cookie dough around the filling until the filling is completely covered
8 8. Bake for 9-11 min (the cookies will naturally flatten in the oven) - bake for
less time if you prefer softer cookies
9 9. Allow to cool on the tray for 10min before moving the cookies onto a cooling
rack to cool completely
