Roasted Corn Cheese Dip

Cheesy roasted corn dip is a simple and delicious way to enjoy that fresh summer

1 tablespoon olive oil
3 cups fresh corn kernels
2 cups sharp Cheddar cheese

shredded
8 ounces reduced-fat cream cheese

cut into small pieces
1/2 cup cornflakes
1/8 teaspoon cayenne or chili powder

Instructions

1 Preheat oven to 375°F
2 Add 1 tablespoon olive oil to a 10-inch skillet over medium heat. Add corn;
cook, stirring occasionally, until mostly golden brown, 5 to 7 minutes. (Corn
kernels may “pop” as they brown.)
3 Remove from heat; stir in Cheddar and cream cheese. Sprinkle cornflakes over the
top. Transfer to the oven. Bake until golden and bubbling, 18 to 20 minutes.
4 Sprinkle the cheese dip with cayenne and serve.
