1 Start by preheating your oven to 350 degrees F (175 degrees C) and preparing two
baking sheets with parchment paper.
2 In a bowl, mix together the flour, baking soda, and salt until well combined.
3 Using an electric mixer, beat the shortening and white sugar together in another
bowl until you achieve a smooth texture. Add in the mashed banana, eggs, and
vanilla essence, and mix thoroughly.
4 Slowly incorporate the dry ingredients into the mixture until just combined; you
should end up with a sticky dough. Use a tablespoon to drop rounded amounts of
dough onto the prepared baking sheets, leaving about 2 inches of space between
each.
5 Place the baking sheets in the preheated oven and bake for 10 to 15 minutes,
switching the positions of the racks halfway through, until the cookies are
slightly golden.
6 While the cookies are baking, prepare the glaze by mixing the confectioners'
