Vegan Greek Lentils

🧂 Ingredients
1 cup
dry lentils
1 cup
baby cucumbers, sliced
1 cup
cherry or grape tomatoes, cut in half
I used sangria for different colours
½ cup
kalamata olives, cut in
2 tbsp
lemon juice
3 tbsp
red wine vinegar
½ cup
red onion
1 tsp
dried oregano
½ cup
vegan feta
¼ cup
parsley, chopped
pepper to taste

Cook lentils per instructions

While lentils are cooking, put the rest of the ingredients in a large mixing
bowl

Once lentils are cooked, drain, and add to the bowl with the remaining
ingredients. Toss well

Eat by themself or serve with gluten free pita, hummus and vegan garlic or
tzatziki sauce
