Gluten Free Apple Spice Snickerdoodles

🧂 Ingredients

• 1/2 cup butter

  or dairy free butter like Earth Balance buttery bars
• 1/2 cup shortening
• 1 cup sugar
• 1/2 cup brown sugar

  light or dark
• 1/2 tsp vanilla
• 2 eggs
• 1 cup apple cider

  reduced to 2 Tablespoons.
• 1 3/4 cup gluten-free all-purpose flour

  I have used GFJules and Orly London Blend- both contain Xanthan gum
• 2 tsp cream of tartar
• 1 tsp gluten free baking soda
• 1/4 tsp salt
• 1 tsp Apple Spice Mix
• 1/4 cup sugar
• 1 Tbsp Apple Spice Mix
• 1/3 cup chopped dried apples

Instructions

• 1 Preheat oven to 375
• 2 Boil Apple Cider for about 15 minutes or until reduced to about 2 Tablespoons.
  Let cool slightly.
• 3 Cream together butter, shortening, sugar, vanilla, and eggs until light and
  fluffy.
• 4 Stir in reduced Apple Cider.
• 5 Add gluten free flour, cream of tartar, baking soda and salt.
• 6 Beat until combined.
• 7 Fold in crushed dried apples.
• 8 Roll into one inch balls.
• 9 Combine 1/4 cup sugar with 1 Tablespoon apple spice.
• 10 Roll balls in the sugar mixture.
• 11 Bake at 375 for 10-11minutes.
