Butter Chicken Soup

Everything you love about butter chicken but in a soup. What more needs to be

Instructions

1 Mix all the spices and set aside.
2 Heat a large pot over medium-high heat. Add in the oil and chicken thighs, then
cook for about 5 minutes or until the chicken is browned.
3 Put the onion in the pot and cook for 3 minutes or until the onions start to
soften. Add the ginger, garlic, and chilli and cook for 1 more minute.
4 Add the butter and spices to the pot, cook for 1 minute, then pour in the tomato
purée and water.
5 Bring to a boil, then add the potatoes. Put a lid on the pot, turn the heat down
to medium-low and simmer for 10 minutes.
6 Add the peas, put the lid back on and simmer for another 5 minutes.
7 Add the cream, cook for 2 minutes, then taste and adjust the seasoning with salt
and pepper as needed.
8 Take the pot off the heat and stir in the cilantro, mint, fenugreek leaves, and
lemon juice. Serve.
