Pumpkin Ketchup

In this recipe I´ll show you how to make pumpkin ketchup. This is a delicious
variation on the traditional ketchup. Surprisingly good and a perfect
alternative for on your Autumn dinner table.

Instructions

1 Wash your pumpkins really good.
2 Remove the seeds and cut the pumpkin in smaller pieces
3 Add a bit of olive oil to a pan, and add the onions, peppers, rosemary, garlic,
bay leaves to it. Cook until the onions are golden.
4 Add your pumpkin to the pan, cook for about 5 minutes. Stir regularly. Add
boiling water and let it cook until the pumpkin gets soft. This takes about half
an hour. Add salt and pepper to taste.
5 Add the other ingredients and mix well. Let it boil for another 5 minutes.
6 Mix all very well until you have a smooth sauce.
7 Fill up your sterilized bottles. Water bath them for 40 minutes by 90 °C. When
sealed properly you can keep your Ketchup up to 6 months in your pantry. After
opening keep in your fridge.
