Beer Cheese Dip

🧂 Ingredients

• 2 tablespoons butter
• 2 tablespoons flour
• ½ cup whole milk
• ½ cup beer

  of your choice
• 2 teaspoons dijon mustard
• ½ teaspoon smoked paprika
• 2 oz cream cheese
• 8 oz shredded sharp cheddar cheese
• Salt & Pepper

  to taste
• Sliced green onions or scallions

  for garnish and dipping
• Pretzels

  Crusty bread and veggie sticks, for dipping

Instructions

• 1 Melt the butter in a medium-sized saucepan over medium heat.
• 2 Add the flour and cook, stirring constantly, for about 1-2 minutes or until a
  thick paste is formed.
• 3 Slowly pour in the milk, stirring constantly.
• 4 Continue cooking for about 1-2 minutes, stirring constantly, until the mixture
  thickens slightly.
• 5 Stir in the beer, Dijon mustard, and smoked paprika. Cook, stirring for one
  minute.
• 6 Stir in the cream cheese and shredded sharp cheddar cheese and cook until the
  cheese has melted.
• 7 Taste and season with salt and pepper, to taste.
• 8 Transfer to a serving bowl and top with fresh sliced green onions.
• 9 Serve with pretzels, pretzel bites, crusty bread, and/or veggie sticks for
  dipping.
