Soft Lemon Cookies

These lemon cookies are soft, tender, and not overly sweet. The best cookie for
a cup of coffee or tea in the afternoon.

🧂 Ingredients

1 In a medium bowl whisk together the flour, baking powder and salt. Set aside.
2 In a large bowl cream the butter and sugar, approximately 2-3 minutes, add the
egg, lemon juice and zest beat to combine. Add the flour mixture and beat to
combine, cover the bowl and chill for 30 minutes.
3 Roll into balls (golf ball size), roll in powdered sugar and place on parchment
paper lined cookie sheets. Refrigerate for 15 minutes while the oven is
pre-heating.
4 Pre-heat oven to 350F (180C).
5 Bake for 12-15 minutes until lightly golden. Let cool on cookie sheet for 5-10
minutes then move to a wire rack to cool completely. Dust with powdered sugar if
desired. Enjoy!
