2 pounds Potatoes

preferably Yukon Gold or Russet, washed and cut into bite-sized cubes
8 slices Bacon

cooked until crispy and crumbled
2 tablespoons Olive oil
1 tablespoon Fresh rosemary

finely chopped
1 tablespoon Fresh thyme

finely chopped
1 teaspoon Garlic powder
1 teaspoon Salt

1 Preheat your oven to 425°F (220°C). This high temperature will ensure that the
potatoes become crispy on the outside while remaining tender on the inside.
2 In a large mixing bowl, combine the potato cubes, olive oil, chopped rosemary,
chopped thyme, garlic powder, salt, and black pepper. Toss everything together
until the potatoes are evenly coated with the seasonings.
3 Transfer the seasoned potatoes to a baking sheet, spreading them out in a single
layer. This allows them to roast evenly and develop a golden crust.
4 Place the baking sheet in the preheated oven and roast the potatoes for about
25-30 minutes, or until they are golden brown and crispy. Be sure to give them a
gentle toss halfway through to ensure even browning.
5 While the potatoes are roasting, cook the bacon until crispy. Once cooked,
crumble the bacon into small pieces and set aside.
6 Once the potatoes are done, remove them from the oven and sprinkle the crispy
bacon crumbles over the top. Give everything a final toss to incorporate the
