3 1/2 oz
butter
7 oz
chopped onion
9 oz
tomato concass©e
chopped parsley

Wash and trim both ends of 3.3 lb small okras (ladies' fingers).

Heat 3 1/2 oz butter in a pan and Sauté 7 oz chopped onion without colour, add 9
oz tomato concassée and the okras; season, cover and cook gently for 25 minutes.

Serve sprinkled with chopped parsley.
