potatoes
2 tsp
cumin seeds
2 tsp
mustard seeds
5 1/2 floz
oil or ghee
1 tsp
coriander seeds
1 tsp
ground turmeric
1 tsp
chilli powder
1 lb
tomato concass©e
5 floz
water
chopped onion

Instructions

Boil potatoes in their skins until half cooked; skin and cut into 5 mm slices.
Fry 2 tsp each of cumin seeds and mustard seeds in 5 1/2 floz oil or ghee until
they burst, then add 1 tsp each of coriander seeds, ground turmeric and chilli
powder.

Add 1 lb tomato concassée and 5 floz water, simmer for 5 minutes, then add the
sliced potatoes.

Season with salt and simmer until cooked and all the liquid has evaporated.

Serve sprinkled with chopped onion.
