🧂 Ingredients

1 large sweet potato
1/4 tsp thyme
1/2 tbsp unsalted butter

Instructions

1 Wash and peel the sweet potato.
2 Flash cook them in a pressure cooker for 2 whistles. If not using a pressure
cooker, cook in an open pot in water for 20-30 minutes.
3 Once boiled, transfer the sweet potato pieces to a bowl and roughly mash with a
fork.
4 Heat butter in a pan. Once the butter has melted add the roughly mashed sweet
potato and thyme. Mix and mash the butter into the sweet potatoes.
5 Once the butter and sweet poatoes are well combined, turn off the heat and
serve.
