M&M Peanut Butter Cookies

🧂 Ingredients

• 1/4 cup coconut oil

  you can substitute Crisco shortening
• 1/4 cup unsalted butter

  softened
• 1/2 cup extra crunchy peanut butter
• 1/2 cup brown sugar

  packed
• 1 1/4 cups UNBLEACHED all-purpose flour

  (Bleached flour toughens baked goods)
• 1/2 tsp. baking powder
• 1/2 cup granulated sugar
• 1 large egg
• 3/4 tsp. baking soda
• 1/4 tsp. sea salt
• 2 cups M&M chocolate candies

  divided use
• 1/3 cup granulated sugar

  to roll cookies in

Instructions

• 1 Set aside 1 cup M&M’s to decorate the tops of the cookies.
• 2 Mix thoroughly the coconut oil, butter, peanut butter, sugar, brown sugar, egg,
  baking soda, baking powder and salt with an electric mixer in a large mixing
  bowl.
• 3 Add flour and remaining cup of M&M’s and stir well to combine.
• 4 Cover and chill.
• 5 (You cannot omit this step).
• 6 Heat oven to 375°.
• 7 Shape dough into 1-inch balls.
• 8 Roll in 1/3 cup granulated sugar.
• 9 Place 2 inches apart on lightly greased baking sheets.
• 10 Top with 3-4 M&M’s on each cookie.
• 11 Bake 15-20 minutes or until set but not hard.
• 12 Rotate Cookie sheets on racks every six minutes during baking time.
• 13 Cool completely
