Panzanella Salad

PanzanellaSalad is made with juicy tomatoes, creamy mozzarella cheese, sweetred
onions, and crusty bread tossed with fresh basil and topped withhomemade
vinaigrette dressing.

Instructions

1 Preheat oven to 400˚F.
2 Add the bread to a mixing bowl, drizzle with 2 tablespoons of olive oil and a
pinch of salt, toss to combine.
3 Spread on a baking sheet covered with parchment paper and bake for 10-12 minutes
or until toasted, and golden in color. Remove from the oven and set aside to
cool.
4 In a small bowl, combine the dressing ingredients and whisk. Set it aside.
5 Add all the salad ingredients to a bowl, let them stand for 10-15 minutes, so
the bread gets some of the tomato juice.
6 Drizzle on the dressing, to taste. Toss the salad gently, garsnish with more
basil leaves and serve.
