1 Heat olive oil in a large skillet over medium-high heat. Add the onions and cook
for 1-2 minutes until they are translucent.
2 Add ground beef and garlic and cook while breaking up until the beef is cooked
through and no longer pink.
3 Once the ground beef is cooked, add the beans, corn, diced tomatoes, bell
peppers, beef broth, cumin, oregano, cayenne pepper, paprika, salt, and ground
coriander. Stir and bring to a boil.
4 Stir in the rice

cover and reduce heat to medium-low. Cook for 25-30 minutes or until the rice

5 Stir in 1 cup of the shredded cheese and scatter the additional cheese over the
