Lucky Charms Cookie Recipe: A Magic St. Patrick’s Day Treat

🧂 Ingredients

1 cup all purpose flour
3 tsp baking powder
1/4 cup butter (softened–not cool and hard, but not totally room temperature and melty)
1/2 cup brown sugar or granulated sugar (Use what you have)
1 egg
1 cup Lucky Charms Marshmallows

General Mills sells the marshmallows separately (see link: https://amzn.to/3UFR2eo)

1 Preheat your oven to 350°F and line a baking sheet with parchment paper and set
aside.
2 Using a hand mixer or stand mixer, beat together 1/4 cup butter and 1/2 sugar
until they are well incorporated (evenly mixed)

Add 1 egg to the mixture and beat again until well incorporated.
3 In a small bowl, mix together 1 cup flour and 3 tsp baking powder.
4 Slowly add the flour mixture to the mixing bowl, and beat together until the
creamed sugar and flour mixture are well incorporated.
5 Fold in 1 cup Lucky Charms marshmallows and roll dough into 1 inch balls and
place on your prepared baking sheet.
6 Bake cookies for 12 minutes or until lightly golden brown.
7 Remove the cookies from the oven.
8 Optional: Once you remove the cookies quickly place a few marshmallows on the
top of the cookies for added decoration. Enjoy!
