Funfetti M&M Cheesecake Brownies

🧂 Ingredients

• 2 boxes Funfetti cake mix
• 3 large eggs
• 1 cup canola oil

  or use coconut oil or avocado oil
• 2 cups rainbow sprinkles

  divided use
• 20 oz. bag peanut butter Easter color M&M's

  (two 10-ounce bags)
• 21 oz. container rainbow sprinkles

  (two 10.5-oz. containers)
• 16 oz. pkg. cream cheese

  softened (two 8-ounce blocks)
• 2 large eggs
• 2 tsp. vanilla extract
• 1 cup granulated sugar

Instructions

• 1 Stir cake mixes, eggs, and oil together with a wooden spoon until no lumps
  remain in the batter.
• 2 Add 1 container rainbow sprinkles and 1 ½ bags M&Ms.
• 3 Spray an 11x17" jelly-roll pan with cooking spray.
• 4 Press a thin layer of cookie dough about ½ to 2/3 of the mixture prepared baking
  dish; reserve remainder of cookie dough for topping.
• 5 Top with cream cheese filling.
• 6 Crumble remaining cookie dough over top of cream cheese layer.
• 7 Sprinkle remaining half bag of M&Ms and several tablespoons of rainbow sprinkles
  to cover the top.
• 8 Bake at 350° about 35-40 minutes or until toothpick inserted in center comes out
  clean.
• 9 Cut into 48 brownies.
• 10 Mix ingredients with an electric mixer.
• 11 Spread over top of crust layer.
