1/4 cup all-purpose flour
1/2 teaspoon baking powder
2 tablespoons granulated sugar
2 tablespoons shredded coconut
3 tablespoons milk
1 tablespoon sour cream
1/4 teaspoon coconut extract
1 tablespoon butter

Instructions

1 In a small bowl, combine all of the ingredients with a whisk or small spatula.
2 Transfer the batter to a mug and microwave for 1 to 1 1/2 minutes. Mine is
perfect at 1 minute 15 seconds. Begin checking at 1 minute.
3 Let cool slightly and top with buttercream frosting, whipped cream, shredded
coconut, toasted or not.
