The Best Broccoli Cheddar Soup

Instructions

1 In a large pot, sauté the diced onion and shredded carrot in a little bit of
olive oil.
2 Lightly season them with salt and pepper and once the vegetables are soft, add
the minced garlic and sauté for another minute.
3 Add the flower and stir it into the vegetables for two minutes.
4 Slowly stir in the vegetable broth and let the soup thicken up over medium heat
for about 3 minutes.
5 Stir in the chopped broccoli and put a lid on the pot. Let the broccoli cook for
15 minutes.
6 Slowly stir in the heavy cream.
7 Stir in the shredded cheese and season the soup with salt, pepper and garlic
powder.
8 Finally, let the soup simmer for about 10 minutes. Serve warm and enjoy!
