White Chocolate Purple Yam Brownies

This recipe uses Okinawan Purple Yam but you can use Ube if you have it. If
you'd like these White Chocolate Purple Yam Brownies to have a deeper Ube
flavor, you'll need to add a few teaspoons of Ube flavoring.

Instructions

1 Mix all ingredients in a bowl
2 Spread brownies batter evenly on a 7×11 greased baking pan, set aside
3 Melt white chocolate in the microwave, mix every 10 seconds until fully melted
4 Put dollops of white chocolate over brownies
5 Swirl with spoon or spatula, don't over swirl to prevent chocolate from mixing
with batter
6 Bake at 350 degrees F for 22 to 25 minutes or until tester comes out clean
7 Cool brownies before cutting evenly into squares
