Cherry Delight Cake

🧂 Ingredients

• 1 box butter recipe yellow cake mix
• 3 oz. box cherry flavored Jell-O gelatin
• 3/4 cup canola oil

  or use coconut oil or avocado oil
• 4 large eggs
• 1 tsp. almond extract
• 3/4 cup cream

  or half-and-half
• 4 cups cherries

  pitted, halved
• 1/4 cup poppyseeds

  (I only had about 3 tablespoons)
• 1 cup powdered sugar
• 1 tsp. cherry extract
• 1 tsp. almond extract
• 2 1/2 tsp. water

  as needed
• 10 fresh cherries or cherry halves

  for garnish, if desired

Instructions

• 1 Combine all ingredients in a large mixing bowl with a wooden spoon and pour into
  a generously greased and floured bundt pan.
• 2 Bake at 350 degrees for 45 minutes or until knife inserted in center comes out
  clean.
• 3 Cool cake completely.
• 4 Invert onto serving plate.
• 5 Drizzle cherry glaze over top.
• 6 Mix powdered sugar, extracts and enough water to make a thick icing.
• 7 Stir to combine.
• 8 Add only enough water so that glaze is still thick.
• 9 Drizzle glaze over cooled cake.
• 10 Garnish with fresh cherries, or cherry halves, if desired.
