cumin powder

coriander powder
1/2 tsp
turmeric
1/4 tsp
chilli powder
salt
3 1/2 oz
chopped onion
4 tbsp
oil

crushed cloves of garlic
1 tsp
grated root ginger
4 1/2 lb
boiled spinach
4 tbsp
water

Instructions

Mix 1/2 tsp each of cumin powder, coriander powder and turmeric, 1/4 tsp chilli
powder and salt.

Golden fry 3 1/2 oz chopped onion in 4 tbsp oil or ghee, add 2 crushed cloves of
garlic and 1 tsp grated root ginger, then stir in the mixed spices and cook for
a few moments.

Add 2 kg boiled spinach and 4 tbsp water, cover with lid and simmer for 5
minutes. Drain off the surplus liquid and serve.
