🧂 Ingredients

2 cups cheese-flavored instant mashed potatoes

(prepared according to package directions)
2 eggs
1 cup shredded mozzarella cheese
2 green onions

(chopped)
1 teaspoon ground black pepper
no-stick cooking spray

1 Prepare mashed potatoes according to package directions.
2 Add 2 cups cheese-flavored instant mashed potatoes, 2 eggs, 1 cup shredded
mozzarella cheese, 2 green onions (chopped), and 1 teaspoon ground black pepper
to a mixing bowl and stir until thoroughly combined.
3 Spray mini muffin plan with no-stick cooking spray, then use a cookie scoop or
spoon to fill each mini muffin pan cup with potato mixture.
4 Bake at 350 degrees Fahrenheit for 15-18 minutes, or until tops of bites are
slightly golden. Cool for one minute before removing and serving.
