5 links German-style bratwurst
2 large red onions

cut into 3/4” wedges
2 teaspoons brown sugar
1/4 cup olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper

freshly ground
2 tablespoons apple cider vinegar

Instructions

1 Begin by preheating your oven to 425°F and adjusting the rack to the top
position.
2 In a large bowl or directly in a cast iron skillet, combine the onion wedges
with the brown sugar, olive oil, salt, pepper, and vinegar. Toss until the
onions are thoroughly coated.
3 Spread the onion mixture in a single layer in the skillet. Place the bratwursts
on top of the onions.
4 Transfer the skillet to the preheated oven. Roast for 15 minutes, then stir the
onions and flip the sausages. Continue roasting for another 15 to 25 minutes,
until the onions are caramelized and the sausages reach an internal temperature
of 165°F.
