Preheat your oven to 200°C (or 180°C with fan assistance) to prepare for baking.

In a large bowl, combine the peeled and sliced potatoes with butter and minced
garlic. Sprinkle the French onion soup mix over the potatoes and pour in the
boiling water, ensuring the potatoes are well coated.

Transfer the potatoes to a 2.5 to 3-quart casserole dish and bake in the
preheated oven for 30 minutes. Stir the potatoes halfway through to promote even
cooking.

While the potatoes are baking, heat olive oil in a skillet over medium-low heat.
Add sliced onions and brown sugar, cooking slowly until the onions are
caramelized and golden brown, about 20-25 minutes.

Once the potatoes have completed their first baking phase, remove them from the
oven and mix in the caramelized onions. If desired, add fresh rosemary at this
stage.

Return the combined mixture to the oven and bake for an additional 20-30
minutes, or until the potatoes are tender and the top is golden brown. If you're
adding cheese, sprinkle it on top during the last 5 minutes of baking.
