Boiled Cookie Recipe (aka No-Bake Cookies)

A quick chocolate oatmeal cookie made by boiling instead of baking!

🧂 Ingredients

1 stick butter
1/2 cup milk
2 cups white sugar
1/3 cup cocoa powder (unsweetened)
1 tsp vanilla extract
2/3 cup creamy peanut butter
3 cups quick oats

(you can use old-fashioned oats but they will be chewier)

1 Melt stick of butter in large saucepan over medium heat.
2 Add sugar, milk and unsweetened cocoa powder. Continue stirring constantly over
med-high heat until mixture comes to a rolling boil.
3 Once it's boiling, stop stirring and let it boil, untouched for 60 seconds.
4 Turn off heat and add peanut butter and teaspoonfuls of vanilla extract.
5 Stir in oats until completely incorporated.
6 Use a spoon or cookie scoop to drop cookies onto parchment paper or waxed paper.
(I actually used a 1/3 measuring cup for bigger, more equal-sized cookies.)
7 Let cool completely and serve!
