Sweet Potato Ice Cream

🧂 Ingredients

• 1 cup roasted sweet potato

  mashed and cooled
• 2 cups heavy whipping cream

  cold
• 1 14 oz can sweetened condensed milk
• 1 tsp vanilla extract
• 1/2 tsp ground cinnamon
• 1/4 tsp ground nutmeg

Instructions

• 1 In a blender, combine the mashed sweet potato, sweetened condensed milk, vanilla
  extract, cinnamon, and nutmeg. Blend until smooth.
• 2 In a mixing bowl, beat the heavy whipping cream with an electric mixer until
  stiff peaks form.
• 3 Gently fold the sweet potato mixture into the whipped cream until well combined.
• 4 Pour the mixture into a loaf pan and smooth the top with a spatula.
• 5 Cover with plastic wrap and freeze for at least 4 hours or until firm.
• 6 Scoop and serve, optionally garnishing with crushed pecans or a drizzle of
  caramel sauce.
