"Almost" Shack Stack Burger

"Almost" Shack Stack Burger

Best part about making a burger at home is that you can add anything you want to it. I added bacon to my burger! You can also consider adding pickles, jalapenos, relish, or an egg. But in all seriousness, this burger is already pretty loaded and very yummy! I am definitely a meat lover, but I would be pretty happy eating it without the beef too!

Fried New Year Rice Cake 煎年糕

Fried New Year Rice Cake 煎年糕

This Fried New Year Rice Cake recipe requires the use of a pre-made rice cake. If you need an easy recipe for that, check out mine here [https://auntieemily.com/easy-chinese-new-year-rice-cake/]. Serving and eating rice cake during Chinese New Year is an important tradition because the Chinese homonym for cake 糕(gāo) sounds like 高, means up, high or tall. During Chinese New Year, people will say auspicious phrases to one another. 步步高升 (bù bù gāo shēng) means wishing that every step you take leads you to a higher position. 快高長大(kuài gāo zhǎng dà) is usually said to children and it means wishing that you will grow big and tall quickly.

Deep-Fried Egg Whites with Red Bean Paste 高力豆沙

Deep-Fried Egg Whites with Red Bean Paste 高力豆沙

I used store-bought sweetened red bean paste. It’s also common to add a slice of banana to the red bean paste. Other options are lotus seed paste and black bean paste. I suggest using 1L of oil but it depends on how big and how deep your pot for deep-frying is. For a small pot where you fry two or three at a time, you may be able to use around 500ml oil. They will float and half of the ball will be submersed in the oil. If oil is not enough, you’ll end up getting slightly flattened balls. For nice spheres, use an ice-cream scoop and enough oil for the ball to float and not touch the bottom of the pot. This recipe makes 5 large (5cm or 2” in diameter) ones.

Deep-Fried Noodlefish 椒鹽白飯魚

Deep-Fried Noodlefish 椒鹽白飯魚

I used frozen Noodlefish aka Silver Fish.  I believe that then can be commonly found at Asian supermarkets.  The one I found come in a small box with only 128g contents.  It’s enough for  a 2 person meal with congee and perhaps another small dish.    I use a combination of manioc flour aka cassava starch aka tapioca starch (茨粉cífěn).  Be aware that sometimes sweet potato starch is also called tapioca starch, but it’s not what we want for this application.

Taiwanese Fried Chicken 台灣炸雞排

Taiwanese Fried Chicken 台灣炸雞排

This recipe is for boneless chicken. I prefer chicken leg meat but you can also use chicken breast with or without the skin. At some Asian butcher shops, you can find de-boned chicken legs for sale. Note that the prep time does not include de-boning the chicken. Serve with rice, noodles or bread. Makes a delicious crispy chicken sandwich.
