Chinese Long Beans with Shrimp Paste ่ฆ้†ฌ็‚’่ฑ†่ง’

I used Chinese white long beans for this recipe. You can also use Chinese green long beans or green beans for this recipe. Chinese white long beans are slightly sweeter, meatier and has a higher water content than Chinese green long beans. I personally prefer the white ones over the green ones.

I used pre-made shrimp paste that I found at a Chinese supermarket in the fresh seafood section. You can also stuff shitake mushrooms and bitter melon. You want to stay away from vegetables with high water content and the ones that take a long time to cook through. Street vendors in Hong Kong also use โ€œred sausageโ€ to stuff shrimp or fish paste. You can get this at a Hong Kong BBQ store. I used a very light sauce to make this a quick and easy dish. If you like the thicker sauces, just add a cornstarch slurry when you make the sauce.

You can use tofu puffs instead of Chinese donuts. But the Chinese donuts make these bullions extra crispy! Chinese donuts can usually be found in the frozen section or the bakery in Chinese grocery stores. You can also substitute the shrimp paste with fish paste. I found my shrimp paste in the fresh seafood section of a Chinese grocery store. I used a Thai sweet chili sauce as a dipping sauce. You can also use plum sauce or Chinese red vinegar.

You can also use crab claws or a sturdy fish fillet like cod or basa. To make the sweet and sour dipping sauce, simply combine 2 tbsp of ketchup, 2 tbsp of rice vinegar, 1 tbsp sugar and 1 tbsp water. Heat in a pan until the sugar dissolves. Thai chili sauce also works well as a sauce for this dish.
