Recipe for Flourless Cookies

Recipe for Flourless Cookies

This was my very first attempt at making a healthy version of Cookies. It was specially requested by a friend for her 16-month old Son who was in this phase of eating ONLY cookies. So she thought why not give him a healthy version and be guilt free. I made these for her and the little champe njoyed them! Happy Me 🙂 With some guidance from my SIL Sophie of Sophie’s Kitchen Love and a tip I received from Sascha, a certified Nutritionist in Dubai(Just get rolled oats and make your own flour, she once said. Atleast you’ll know you're eating 100% oats and not a mixture. This you can substitute for all your Maida products) So these are Flourless cookies made with Powders of Mixed Nuts and Rolled Oats, which yesss! I ground at home. Do make these super simple and delish cookies for your kiddos and be free off the guilt of them eating junk.

Poha/Fov/Flattened Rice Recipe

Poha/Fov/Flattened Rice Recipe

Poha is the local Indian name for Flattened Rice. It is also known as "Fov" in Konkani. Poha is a very delicious and extremely healthy breakfast or tea time snack.  From the healthy lot, this happens to be my favourite breakfast/tea time snack! It not only excites my taste buds, but also keeps me fuller for a longer period of time 🙂 My love for Poha goes way back to my childhood days wherein all the children of my area would go to a Garden in South Mumbai to play during evening time and before leaving for home after winding up, our parents used to treat us at a humble 'garden canteen' also knows as "Zhunka Baakar" runned by women. All of us as kids used to wait for our turn to enjoy our evening snacks after play.  I dedicate this post to all my childhood friends who enjoyed eating at "Japanese Garden"  Sharing with you all, my version of Poha/Fov/Flattened Rice. Hope You Enjoy It 🙂

Patoleos/Patolis/Pathoyo Recipe

Patoleos/Patolis/Pathoyo Recipe

Patoleos/Patolis pronounced as "pathoyo" or "pathoyee" is a Traditional Goan/Mangalorean tea time snack which is prepared in most Goan/Mangalorean homes, on 15th August, in order to celebrate the feast of The Assumption of The Blessed Virgin Mary into Heaven.  It is made out of Rice batter and stuffed with grated coconut and jaggery, wrapped in Turmeric leaves and steamed. Since turmeric leaves are not available here in Dubai, two of my close buddies, Cynthia Fernandes(Cyn) & Vincent Jelkie(VJ), brought them for me all the way from their garden back home in Belgaum, India.  When Patoleos/Patolis are being prepared at home, the entire house is filled with a sweet, strong Aroma of the Turmeric leaves. I can bet you can't just eat one and get away with it!  This post is dedicated to my buddies, Cyn & VJ!

Recipe for Moist Carrot Cake

Recipe for Moist Carrot Cake

I was introduced to Carrot Cake by my sister in law Sophie, about 2 years ago. Her Carrot cake is, Hands down, the best I’ve eaten so far. If it wasn’t for her, I don’t think I would ever have dared to purchase or make a Carrot cake, simply because Mr. Carrot is not a very close buddy to me. Carrots have been my enemies since my childhood. My Mum has tried each and everything to feed me carrots, right from salads to adding them to my rice and pulaos and what not. Now with this delicious Carrot Cake, Carrots are slowly becoming my close friends. This recipe is a blend of 3-4 recipes that I have tried and combined, in order to get the perfect taste and texture as per my preference. I decided to share it with all of you only after my friends tasted it and said it was Super delish! It is a super moist and flavor packed cake. I’d like to share my recipe with all of you. This one’s for all the “Not-So” Carrot Lovers! Hope you enjoy it as much as my friends and I do.
