This was my very first attempt at making a healthy version of Cookies. It was specially requested by a friend for her 16-month old Son who was in this phase of eating ONLY cookies. So she thought why not give him a healthy version and be guilt free. I made these for her and the little champe njoyed them! Happy Me šŸ™‚ With some guidance from my SIL Sophie of Sophie’s Kitchen Love and a tip I received from Sascha, a certified Nutritionist in Dubai(Just get rolled oats and make your own flour, she once said. Atleast you’ll know you're eating 100% oats and not a mixture. This you can substitute for all your Maida products) So these are Flourless cookies made with Powders of Mixed Nuts and Rolled Oats, which yesss! I ground at home. Do make these super simple and delish cookies for your kiddos and be free off the guilt of them eating junk.

I was introduced to Sabudana vadas when we shifted to our new Home. These vadas were and still are a favourite snack at most of our Building Flag Hoisting ceremonies and Building Meetings. The best part about these vadas are that it is fried and served to us on the spot and that is what made this one of my favourite vegetarian snacks! Top Secret: I attend these building meetings and ceremonies ONLY for this. Hahahaha! These vadas are known as ā€œupwasā€ vadas because they are consumed by the Hindu community on fasting days. Many years ago, I had tried my hand at Sabudana khichdi, butI failed miserably because I didn’t get the Sabudana soaked correctly plus the taste was bla.In short, the recipe and instructions were not upto the mark. So, after that, I thought I’d never get it right so I never really bothered trying.I was happy about attending my building community meetings and ceremonies!Hahaha But very recently my Cousin-in-law who wears many feathers in her hat, CARMELITA FERNANDES, Singer, Writer, Blogger, Banker, Chef, Economist and So much more, posted her Sabudana Vada pictures along with the recipe and I just I knew I would get it right this time because it was so beautifully and specifically explained. And guess what! I wasn’t wrong at all!! This was my second attempt and it was Spot On! Also, With a little bit of Youtube advice, I’ve mentioned how I got the Sabudana soaked perfectly. I’ve never come across any person till date who says ā€œI don’tlike Paani Puriā€ not even my Non Indian friends. I always thought that paanipuri is a very ā€œMumbaiā€ thing until very recently where I got to know thatPaani puri is famous in so many states of India, just that they are known bydifferent names. Like in Delhi they are known as ā€˜Gol gappas’. In Mumbai, When we make Paani Puri at home for Dinner, wejust prep the chutneys and other stuff and purchase the puris from the store. Last year, when I learned to make the Puris as well(gratefulfor all the videos I’ve watched especially the failed ones which only pushed meto try harder at getting there), I didn’t tell my Bitter Better that they are home-madeand after he was done I told him & he was totally shocked. The joy ofseeing those puris puff up in the oil, can take away any amount of stress. It’slike therapy for me. And seeing the expression and joy on your family’s facesis like Sone pe Suhaga! Whenever I make Paani at home, I always finish making thechutneys and keeping the other things ready and I save the Puris for lastbecause let’s admit it, it gets tiring to make everything on a single day sowhen you’re tired you need some de-stressor and what better than seeing the PuriPuffs right! As always, whatever I learn I like to share with all of youbecause that’s how I learnt my stuff. No fees No payment… Just free lessons andit has made me what I am! I’m so grateful! Some call them Steak Pao, some say Cutlet Pao but in Goa, it's CART-LACE Pao! Oh Yesss When my stomach screams *Goa* this is what i do in my kitchen. Beef cutlet pao With my favourite salad with a little watery ketchup My Goa trip can never be complete without the Famous Cart-lace Pao. This is the famous Street Food in Goa. You will find a Cutlet Pao cart at almost every corner of the village and the best part is that every cart is always filled with customers! However, the BEST Cutlet Pao I have eaten in Goa is the one made by Salu and his Wife at the cart at Candolim Tinto(The local market place). It is Fresh, filled with Authentic flavour and the filling is just AWESOME! It's usually 2 cutlets in one Pao or Poie, the local Goan Bread. You will find Salu's cart flocked with people coming from nearby villages and far off places too. He earned his fame through his dedication and hardwork and sincerity. Till date, the quality and taste of the cutlet pao remain the SAME(not even similar). If ever you're in Goa, please do visit his cart. It's called 'KING KANE' named after his son, Kane. Since Salu is in business, I thought it wouldn't be ethical for me to ask for the recipe of his famous Cutlet marinade. Hence, I'm sharing with you what we make at Home. Now, at Home, whenever we make Cutlet Pao, we no longer call it Cutlet Pao but "Salu's Steak Pao" šŸ™‚ šŸ™‚
